Half chicken, rinsed, patted dry
4 tbsp Shaoxing wine (Chinese rice wine)
3 tbsp light soy sauce
4 tbsp Shaoxing wine (Chinese rice wine)

- Place 3L water in a large pot and bring to the boil
- Add chicken and blanch for 5 minutes (This removes any impurities.)
- Remove chicken from the pot and discard water
- Reserve pan
- Add oil, ginger, garlic and green onion
- Combine Chinese rice wine, salt, sugar, 3 cups water and soy sauce in the pan
- Stir until sugar dissolves, then bring to the boil
- Reduce heat to low
- Put chicken to the pan
- Simmer for 45 minutes or until the juices run clear
- Remove the chicken from the pan. Cut into pieces
- Divide and serve on plates with steamed rice
